Dan Shimek co-founded Heat-n-Glo fireplaces in 1975. He recently retired as president of Hearth and Home Technologies, the parent company of Heat-n-Glo, and the largest wood and gas fireplace manufacturer in the world. He is currently the president of Fire Stone Home Products.

Kay Shimek has been heavily involved with the architects in the design and décor for the restaurant. She has passionate interests in design and cooking and holds a master's degree in speech therapy.
Julio Pitre

Julio Pitre started in the restaurant business 25 years ago (at the age of 12!) and has been involved in all aspects of the business. Julio is a hands-on guy who brings great experience and enthusiasm to the program. He prides himself in training and developing his staff to be promoted at all levels. Julio understands the importance of each individual and their contribution to the team's success. He will always set the standard and empower his staff to do the same when it comes to taking care of the guests.
